What are Microgreens?
Microgreens are considered baby plants. Not to be confused with sprouts which do not have leaves. Microgreens are harvested while in the cotyledon phase, one of the early stages in a crop's development. It's in the this stage that vegetables have the highest nutrient density. Standing only 2-3 inches tall, they contain 4-40 times more concentrated nutrients than their mature vegetable counterparts.
